Recipe: Chicken Dum Biryani
Ingredients:
- 750 grams of chicken
- 1.5 cups basmati rice (soaked for 30 minutes)
- 2 onions (sliced)
- 2 tablespoons ginger-garlic paste
- 1/2 cup curd
- 1/2 cup mint leaves
- 1/2 cup coriander leaves
- 2 green chilies
- 1/2 teaspoon turmeric powder
- 1 small piece of cinnamon
- 3 green cardamom
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 4 tablespoon milk with a pinch of saffron
- Salt and lemon juice to taste
For Dum:
- A big-sized onion (Thinly sliced)
- 2 tomatoes
- Salted butter
Cooking instructions:
1. In a wok, heat oil, once the oil is heated add cardamom, cinnamon, and cloves, keep the heat at low, and wait for the spices to release fragrance add the sliced onions. Saute for a few minutes until it's golden brown.
2. Add ginger-garlic paste, green chilies, and a little salt to it. Mix it well.
3. Add chicken to the pan and saute it until the color changes.
4. Add curd, mint, coriander, turmeric powder, garam masala, red chili powder, and salt to taste.
5. Mix well and let it cook for a few minutes. Add water if required.
6. In a different pan, add water to boil the rice with some salt and turmeric powder. Cook until it's 70-75% done. Strain the rice and keep it aside.
7. For dum, take a pan and add butter. Then, add sliced onion and fry until golden brown. Add tomatoes and let it cook for a few minutes. Add salt to taste.
8. In a big pot, add chicken gravy and spread it out. Now, add the cooked rice on top of it. Add a layer of fried onion and tomato mixture over it. Add one layer after the other until it’s in the brim of the” Handi.” Drizzle some saffron-soaked milk over it.
9. Close the lid tightly and keep it on low heat. Let it cook for about 45 minutes.
10. Turn off the flame and let it stay like that for 10 more minutes.
Now the yummy Chicken Dum Biriyani is ready to be served.
